Pizzaiolo Damian Barneschi and his wife Rebecca Schauer return to UpperWest for a Saturday afternoon Pop Up on our outdoor patio.
The dough for these traditional Neapolitan-style pizzas is made with a natural sourdough starter and utilizes an extended fermentation to achieve maximum flavor and a light, airy crumb. The 13" pies cook in under 90 seconds and exhibit a puffy, spotted outer crust and an extremely tender, slightly wet center.
