Third Course

Squid Ink Tagliolini Arrabbiata with Mussels

Black long pasta served with a spicy tomato sauce with Prince Edward Island mussels.

Fourth Course

Agnolotti al Plin

A traditional filled pasta dish from Langhe in the Piemonte region of Italy. “Plin” means pinch, which is a step in hand making this pasta. Filled with braised local pork and black angus beef, finished classically with brown butter and sage.

Fifth Course

Chocolate Pappardelle

TBD Foods will be back in Boston on June 16th and Upperwest is kind enough to let us use their kitchen to host one of our dinner parties.  I’ve certainly missed working with our old purveyors (especially seafood) and seeing all of our guests.  

Although it wont be technically summer, this dinner will showcase the first taste of summer from our wonderful farmers in MA .  I look forward to cooking for you all again and getting my hands on some fresh seafood.

Pizzaiolo Damian Barneschi and his wife Rebecca Schauer return to UpperWest to host their first pizza popup of the new year!

The dough for these traditional Neapolitan-style pizzas is made with a natural sourdough starter and utilizes an extended fermentation to achieve maximum flavor and a light, airy crumb. The 13" pies cook in under 90 seconds and exhibit a puffy, spotted outer crust and an extremely tender, slightly wet center.

Diners will have a choice of five pizzas and a salad from these Guest Chefs, in addition to UpperWest's menu which includes cheese, charcuterie and a full bar, which includes their thoughtfully curated wine and amari selections.
